It would've been good to see a bit of the flip side, perhaps something about darker times or shady characters, and the VO is often unnecessary. However, what's there is still immensely inspiring, in terms of these professionals' dedication to their knowledge, skill, and craft, and how in such an institution, human relationships, culture, tradition, and heritage matter more than profits.
I almost wept at the slow-motion closeups of master sushi chefs making a piece of sushi.
