If you only ever watch one Western, this is a good candidate. It is a nihilistic genre-killing take on a frontier disappearing to new technology and a new century, leaving only the old out in the desert.
It is cowboys without camp (except for the Generale yelling about Crazy Gringos!) that shows the limits and possibilities of the conventions.
