Another Disney classic. The movie is short, sweet, and to the point (just over an hour) and features some great animation on both stories. I'm not a huge fan of The Wind in the Willows and the Mr. Toad section of this movie is a little flat (plus it ends up in a very Looney Tunes-esque chase that seems a bit below it), but the animation on Toad is fantastic.
The Legend of Sleepy Hollow portion is pitch perfect and perfectly captures the feel of book...both scary and humorous. It also doesn't really alter the tale (something that Mr. Toad's does slightly).
..The Headless Horseman was one of my biggest fears when I was little, and this movie didn't help.
