Well the thing about the egg that Paolo hangs, is it's not about what's in the egg, just like in the movie "Cast Away" with Tom Hanks, he has a package that you never learn what is in it.
The point wasn't "what was in the damn box" as my brother asked at the end of the movie, but rather the box kept him sane, kept him motivated to get home to deliver the box. Paolo hangs the egg not for Kuki to learn what is in it, more than likely just yolk, but for the meaning behind what he wants her to learn.
The whole time Paolo was telling Kuki "Africa has a different rhythm" well if he was trying to teach her about life, then the egg there would be the life lesson he wanted her to learn.
