As the editor probably realized, the additional scenes don't contribute a great deal towards the plot, if anything. They do, however, develop some some of Harry's characteristics that viewers don't really get to see during the first two films such as his tendency to back-chat and not be as passive as he otherwise seem.
This gives him a more realistic and relatable personality and leads to a few quirky moments not seen in the theatrical cut.
