Essentially adds back in any elements from the book you thought were missing from the theatrical release. Fleshes out Beorn with additional scenes and makes him a far more interesting character for the next film.
Improves the Mirkwood sequence with the Enchanted River and scarier illusions. Adds a bit more to Lake Town and the the Lake Town characters, and includes Gandalf meeting Thorin's father, as was described in the Return of the King appendices.
Overall develops Middle Earth in greater detail and makes the pace of the film more interesting and immersive.
