I think that what makes Reservoir Dogs a good concept is that it's a story about a story. Anyone would go for the bank heist, but what happens before and after is what Tarantino gives you, and with a touch of "human perspective".
The characters act regular people, eventhough they do what normal people do, which gives you a kind of dark humor portrait which is actually closer to real life than other more serious movies.
