A love letter to fish and sushi and dedication and mastery that is as simple and profoundly elegant as the sushi it stars. I am ashamed at my own arrogance with regard to my craft and what I considered to be my level of mastery.
75 years spent in the daily pursuit of excellence and not a word of complaint. I will never view my work the same again.
