Fascinating to watch the singular obsession of an 86-year old sushi chef for the perfect sushi. He now massages an octopus for 45-50 minutes before cooking, instead of 30 minutes that he used to, to make it more tender.
Film critic Roger Ebert writes, "Half an hour of massage was good enough to win three Michelin stars. You realize the tragedy of Jiro Ono's life is that there are not, and will never be, four stars.
