Jiro and his passion for sushi making perfection puts me into a meditative trance as I observe his deft knife skills on the succulent tuna, his gentle smear of wasabi, the molding of the rice and finally the presentation on the minimalistic plate.
Strangely enough, it's also able to push you over the edge especially if you are watching this on an empty stomach. You also feel for his 2 sons who may never reach his level of greatness. Wish I could eat there, but a meal starts at 30000 yen.
