I finally got around to seeing this recently, thought it would be a decent enough holiday movie. And I was neither impressed nor underwhelmed, it was a decent affair that's worth a watch on the whole.
Some highs: the casting, particularly Jeffrey Tambor and Christine Baranski, and Bill Irwin. The work they did on getting the Grinch's dog to match what we expected from the cartoon version was excellent. Many of the visuals were very nicely done. As well, some of the one-liners and such are very funny.
Some lows: While Carrey is good initially, as with his whole schtick, it gets old. I do heart me some Jim Carrey, but this is the same character as the Mask, as Ace Ventura, as the Riddler...and it's not funny or even watchable after a point. Another con is the general pace. It just doesn't really keep your interest past a point. There's no dramatic arc that keeps you interested in what's going to happen, and it never manages to bring out any emotions.
But all that said, it's entertaining for a bit, and simply, could have been muuuuuch worse, so thankfully it's decent.
