It's quite understandable to compare Hostel with Saw. Unfortunately, Saw is way better (all three films I've seen already). Why? First, Saw focusses on what it does best - GORE!!!
You kinda expect the same from Hostel but it starts instead with some partying teens in Amsterdam and you don't see any blood for the first half of the film. The dialogue is, admittedly, well-written (well... Tarantino was involved...) but terribly acted. So, I can't really think of anything that kills the mood of a Slasher film more than some stupid unnecessary dialogue.
The eventual torture scenes are quite good but not worthy to wait for them so long.
