With shows like 'Ghost Hunters' that explored the paranormal (but often staged) events hitting their peak in popularity, Grave Encounters released at the right time to parody these low budget formats for it's own found footage story.
What is at the core of this film is hubris, where the frauds become the exploited. I think it is safe to say that this film's legacy lives on in games such as Outcast 1 and 2 which go to great lengths to simulate handheld movement and UI.
